Carrot soup with a twist
Ingredients (serves 2):
750 gram carrots
1 teaspoon ginger (fresh or powder)
1 tablespoon coconut oil or olive oil
1 teaspoon turmeric
1 teaspoon curry masala
1 teaspoon of garlic (fresh or powder)
1 liter of vegetable stock
200 ml coconut milk
Optional add coriander
In the winter I’m all about soups! I eat it for dinner, lunch and sometimes even for breakfast. This is a simple yet delicous carrout soup to warm up the body on cold and rainy days.
Let’s get started! Clean the carrots and remove the skin. Cut the carrots in to pieces. Grab a pan and fry the ginger, garlic, tumeric, curry masala and the garlic in the pan for 5 minutes. Add the vegetable stock and the carrots in the pan and let it boil. If the carrots are cooked blend the soup with a mixer until it is smooth. Add the coconut milk and stirr it through the soup. Finish it off with coriander. Now it’s ready to get served! Enjoy!
