These spring rolls are a refreshing change from the usual fried variety. They are great as a cool summertime appetizer. Excellent taste and they make a pleasing presentation with the colorful filling. This is my all-time favorite Vietnamese appetizer.
  • 2 ounces rice vermicelli
  • Rice wrappers (8.5 inch diameter)
  • Chop any kind of vegetables (Carrots/Cucumber/Onion etc.)
  • Pineapple for some sweetness
  • Omelet chopped in slices
  • Any kind of meat (Chicken/pork/beef)
  • Cooked shrimp – peeled, deveined and cut in half
  • Chopped fresh Thai basil / Coriander / Mint
  • 4 teaspoons fish sauce
  • 1/4 cup water
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons white sugar
  • 1chilipepper
