Hollandse Nieuwe Haring via Schmidt Zeevis
It’s Herring Season
Herring is one of the most common, cheap and most delicious fish – (one of my favorites! ) one that can be prepared in an endless array of ways: marinated, pickled, salted, fermented, smoked, or, as with the exquisite Hollandse Nieuwe, straight from the sea. A good raw herring must have soft texture with a nice bite. Lucky me that it is the season for some new fresh herring (haring)with its high percentage of fat (over 15%).
At any fish stand in the street, the soused herring is served on a paper plate with onions and pickles. Generally they chop the fish in little pieces or served on bread (‘broodje haring’). However, herring is to be eaten by holding the fish by its tail, dipping it in onions and letting the slippery raw fish then slide into your mouth. Personally, I prefer the chopped version!
